Hummus Recipe

Hummus is one of those foods you either really like or just can’t stand. Personally, I enjoy good hummus and it is so easy to make. Initially when looking for a recipe, I found all kinds out there. I try to minimize the amount of tahini paste since it is high in calories. It does help bring the flavor but I do not find I need to have ½ a cup of it to make the hummus great. All you really need for this recipe are ingredients that you can get at any grocery store these days and a food processor. For a while tahini was difficult to find but even Walmart carries it now.

Ingredients

1 can chickpeas with ¼ cup liquid reserve retained

3 Tbsp lemon juice

1 ½ Tbsp tahini

2 minced garlic cloves

Salt to taste

2 Tbsp olive oil

Drain chickpeas and retain the liquid. Combine ingredients and add the reserve in the food processor. Blend for 3-5 minutes. The longer you blend it, the smoother it becomes. 

The hummus pictured was not blended for long but that is because my husband likes it with some texture. Once you get the hang of it, you can play with the ingredients too. Other items that are great in hummus are sundried tomatoes, bell pepper, paprika, turmeric, curry, and cumin.

I included this last picture because that is how much 1 batch makes. This is an easy size to pack for lunches with carrots, celery, or whatever you decide you want. This also easily lasts more than a week in the refrigerator so you can have it ready when you need it.
